Featured Wine Flight:
NV Franck Peillot Bugey Pétillant Blanc Montagnieu:  This is a traditional sparkling petillant, made w/ Altesse, Mondeuse, Chardonnay from the Jura. The nose shows a light stone fruits with a hit of cream, beeswax, white flowers, and citrus. The palate is clean with moderate acid and a flavor set of mountain minerals, citrus, stone fruits with a floral lift.
Federico Orsi Posca Bianco:  Vino perpetuo, is an ancient wine making technique. The ‘NV’ in the description stands for ‘non-vintage’, meaning that the wine is made from the product of more than one single year. Federico has made what he calls his ‘perpetual cuvée’ - a wine that slowly changes and evolves over time. The idea is a little like a simplified version of the Solera system used in Spanish sherry-making. Each year wine is added to a tank that already contains wine from up to ten previous vintages
Fongoli - Montefalco Sagrantino 2015:This natural take on Umbria’s most prized red is 100% biodynamically farmed, certified-organic, hand-harvested Sagrantino from the oldest vines at Fongoli, planted in 1975. Spontaneous fermentation occurs in open-topped clay amphorae without sulfur or temperature control. The wine is aged in old barrels of Slavonian oak for a minimum of 4 years. It is bottled without fining, filtering or additional sulfur and aged another year before release. Powerful aromas of plums, wet earth and dried herbs jump from the glass.Â
